Experience the culinary and cultural riches of Central Mexico on this exciting week-long adventure. This promises to be an unique opportunity to explore culinary traditions in the environment in which they evolved. This trip that Culinary Adventures organizes is presented by the Culinary Institute of America at Greystone and sponsored by Viking Range for professionals in the food industry and a few experienced Mexican food aficionados. Classes will be conducted by Chef Rick Bayless, chef/owner of the highly acclaimed, award winning Chicago restaurants Frontera Grill and Topolobampo, cookbook author and TV personality, and by Chef Roberto Santibañez, former culinary director of Rosa Mexicano resataurants, author of Rosa's New Mexican Table, and a Mexico City native, as well as by other local cooks. Participants will come away with a good foundation of regional and other typical dishes from throughout Mexico.
